If you haven't landed a dinner reservation at Copenhagen's Noma, widely regarded as the world's best restaurant, don't despair. Filmmaker Maurice Dekkers gives foodies, critics and the uninitiated masses a coveted peek inside the kitchen and creativity of celebrity chef René Redzepi. In January 2015, the food world holds its breath when Redzepi temporarily closes Noma and transports his entire team to Tokyo for a five-week pop-up restaurant. Known for translating the essence of Denmark's unique flavours into one-of-a-kind dishes, now neither Redzepi nor his staff speak the language, let alone know anything of the local food resources. Snapping turtles, fish sperm and mushroom water could either enliven or completely derail his lofty ambition of creating a wholly new menu for a 14-course meal.
